Situated south of Bordeaux in the Midi, Limoux is capable of producing stunning red, white and sparkling wines. Legendary Bordeaux First Growth Mouton Rothschild's decision to set up stall here in 1998 is testament to the quality of the site. And what a wonderful wine they've made. The winemaking process is meticulous ... even by Mouton's standards. Each and every grape is taken gently off its stalk by hand by a team of 120 people, before a further 220 take all the pips out! Using Bordeaux varieties (half the vineyard is Merlot, and the two Cabernets are here too) - as well as few Midi specialities such as Grenache and Syrah - the wines of Baron D'Arques are superb and unique. 18 months in oak lend astonishing spice notes and the fruit intensity, gained from this charming mix of fastidious attention and the blend of grape varieties, is breathtaking.
