But there’s one winery here that puts the appellation firmly on the map. Domaine de la Taille aux Loups is responsible for some of the Loire’s finest Chenin Blanc. And it’s all thanks to its owner, Jacky Blot. Following a career in patisserie, he acquired the winery in the 1990s, and now, with the help of his son Jean-Philippe, the pair create complex wines renowned for their incredible ageability. Jacky’s passion for making dry Chenin is clear in this single-vineyard bottling. Clos de Mosny is a south-facing vineyard – meaning maximum sunlight exposure to ripen intensely concentrated grapes. And since a portion of the juice is fermented in new oak, the final wine has incredible richness and texture. Expect bold and buttery flavours of preserved lemon, apple, beeswax and tangerine, alongside a signature freshness that pairs beautifully with chicken dishes. Stored correctly, it has potential to age for a decade or more..
