Definition by Majestic English Sparkling 2019, Kent. This classic English sparkling was made in partnership with Winemaker Nick Lane – previously of Dom Perignon and Cloudy Bay. Hailing from The Heppington vineyard, a gentle south facing slope of the North Downs overlooking Canterbury cathedral. The Heppington vineyard sits on part of the same geological strata as Champagne, with a thin layer of topsoil sitting over chalk. Crafted from 46% Pinot Noir, 39% Chardonnay and 15% Pinot Meunier, the three varietals are hand picked separately. Gentle pressing and brief, natural clarification are performed prior to racking and inoculation with a neutral yeast. Partial malolactic fermentation is carried out to attain an ideal balance and texture. The base wines are matured in stainless steel, blended and bottled after three months adding the sparkle through secondary fermentation using the traditional method. Its a wonderfully young wine with aromas of green apple, citrus blossom and light brioche. The palate is delicate with a silky mousse and precise acidity with flavours of orchard fruits and fresh basil. Perfect for pairing with lighter dishes, canapes or as an aperitif..
