Simonnet-Febvre ‘Blanchot’ Chablis Grand Cru 2020/22. Simonnet-Febvre has one of the richest histories in Chablis. Along with fine still wines, the estate has long been renowned for its bottles of fizz. So much so, that in 1891, Burgundy giants, Louis Latour, celebrated the purchase of Château Corton with Simonnet-Febvre ‘sparkling Chablis’ – the makings of what is now called Crémant de Bourgogne. Ironically, several generations later, Simonnet-Febvre is now owned by Louis Latour – though the running of the estate is still very much a family affair. Their Blanchot vines are more than 40 years old, so along with Chablis’ distinctive limestone soils, the resulting wines are full of complex mineral flavours. Rich and powerful, this vintage has notes of citrus, rose and earthy mushroom. It’s rounded and supple, so enjoy it with a creamy chicken dish, or cellar until 2028..
